Yields 10 guests
Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Citrus Syrup: Place the listed components inside a saucepan, bring to a light boil, mixing until the sugar dissolves. Then, remove from the burner allowing it to cool entirely. Pour into an sterilised bottle, seal and store in the fridge, it will last for about a month.
To make Cocktail Base: Pour the specified liquid ingredients into one big jug, let it rest for one hour, then pass it through , ideally through a fine cloth, so it's fully clarified.
When ready to serve: Add 85ml of the cocktail base into a mixing glass packed with ice, and stir lightly for about 60 seconds to cool it down. Strain to a frosted cocktail glass or a similar vessel, top with the cranberries and complete it with a quick spritz of the essential oil over the drink.
